Sheftalia is a popular traditional Cypriot food. It consists of a mixture of minced pork, chopped onion, parsley, cinnamon, salt and black pepper.
One full tablespoon of the mixture is wrapped in lamb caul fat (umbrella) (in Cypriot dialect Gym), then passed to iron away straws (in Cypriot dialect chisels) and charbroiled.
Bake it in the oven, or in grill.
Enjoy it as a main dish with potatoes, or rice aside, or you can put it in warm Cypriot pita with sliced tomato, cucumber, onion and parsley.
