  • Fresh raspberries, for garnish

Method:

  1. Preheat oven to 190°C (fan).
  2. Gently melt the butter and chocolate together in a heatproof bowl over simmering water. Stir until smooth.
  3. In a separate bowl, whisk the eggs and sugar for about 2 minutes until slightly thickened.
  4. Fold the melted chocolate into the egg mixture. Add salt and sifted flour, mixing just until combined.
  5. Spoon the mixture into greased ring moulds or ramekins, filling to about 1 cm from the top.
  6. Bake for 10–12 minutes until the edges are set but the centre is slightly soft.
  7. Cool for 5 minutes before removing from moulds.
  8. Dust with icing sugar and top with raspberries.

Tip: Serve warm with a scoop of vanilla ice cream for a restaurant-style dessert.


2. Mini Chocolate Loaves

These rich little loaves are easy to make and can be adapted for a better balance try reducing sugar or adding wholemeal flour for extra fibre.

Serves: 4

Ingredients:

  • 100 g all-purpose flour
  • 200 g dark couverture chocolate
  • 150 g butter
  • 1 tsp baking powder
  • 100 g white sugar
  • 2 eggs
  • 1 tsp vanilla extract

Method:

  1. Preheat oven to 180°C.
  2. Melt chocolate and butter together in a heatproof bowl over hot water. Stir in sugar until dissolved.
  3. Beat in eggs one at a time, then add flour, baking powder, and vanilla. Mix until smooth.
  4. Pour into mini loaf tins or muffin moulds.
  5. Bake for about 15 minutes until risen and just firm.
  6. Dust with icing sugar or serve with ice cream.

Tip: For extra texture, fold in chopped nuts before baking. and Swap half the butter for mashed banana or Greek yoghurt to cut down on saturated fat and lighter.


3. Gingerbread Cookies & Spiced Layer Cake

Packed with warm spices, these cookies and cake make a more nutritious festive option when made with natural sweeteners like honey or molasses.

Serves: 12 (cookies) + 1 cake

For the Cookies:

  • 440 g all-purpose flour
  • 145 g butter, softened
  • 150 g brown sugar
  • 160 ml molasses or honey
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 tbsp each ground ginger & cinnamon
  • ½ tsp each nutmeg & ground cloves

For the Cake:

  • 300 g all-purpose flour
  • 1 tsp each ginger & cinnamon
  • ½ tsp each nutmeg & ground cloves
  • Zest of ½ lemon
  • 115 g butter
  • 150 g brown sugar
  • 2 eggs
  • 130 g molasses or honey
  • 125 ml milk
  • 1 tsp vanilla extract
  • 50 g roasted hazelnuts

For the Cream Filling:

  • 375 ml double cream
  • 400 g mascarpone or cream cheese
  • 1 tsp vanilla extract
  • 50 g lemon juice
  • 140 g icing sugar

For the Chocolate Glaze:

  • 125 g dark couverture chocolate (70%)
  • 75 g butter

Method (Summary):

  1. Cookies: Beat butter, sugar, and molasses until fluffy. Add egg and vanilla. Mix in dry ingredients. Chill dough for 2 hours. Roll out, cut shapes, bake at 175°C for 15 minutes. Cool completely.
  2. Cake: Cream butter and sugar. Beat in eggs, molasses, and vanilla. Alternately add flour mixture and milk. Fold in hazelnuts. Bake in two 20 cm tins at 180°C for 35–40 minutes. Cool.
  3. Cream Filling: Whip mascarpone, vanilla, lemon juice, and icing sugar. Add double cream and whip until thick.
  4. Assemble: Sandwich cakes with half the cream. Spread remaining cream on top and sides. Chill for 3–4 hours.
  5. Glaze: Melt chocolate and butter, cool slightly, pour over chilled cake. Decorate with cookies.

Ingredients:

  • 300 g soft pastry flour (No. 2)
  • 400 g fresh butter
  • 150 g blanched almonds
  • 2 tsp vanilla extract
  • 120 g icing sugar
  • 30 ml cognac or dark rum
  • ½ tsp baking powder
  • Extra icing sugar for coating

Method:

  1. Preheat oven to 175°C. Toast almonds for 5 minutes. Cool, then crush.
  2. Beat butter and icing sugar until pale and fluffy.
  3. Add both flours, baking powder, and vanilla. Mix until just combined.
  4. Stir in cognac and almonds.
  5. Shape into small balls and place on lined baking trays.
  6. Bake at 160°C for 15–20 minutes.
  7. While warm, dust with icing sugar. Cool completely, then roll again in icing sugar.

Tip: Store in an airtight container for up to two weeks and replace some of the butter with nut butter for extra protein and wellness-friendly fats.


5. Savoury Pumpkin & Oat Flour Pie

This savoury pie is naturally rich in fibre thanks to pumpkin and oat flour. It’s a great mindful eating choice snack or light lunch option

Serves: 15

Ingredients:

  • 200 g all-purpose flour
  • 120 g oat flour
  • 500 g grated pumpkin
  • 3 eggs
  • 60 ml olive oil
  • 60 ml milk
  • 1 spring onion, chopped
  • 40 g feta cheese, crumbled
  • ½ tsp turmeric
  • 1½ tsp baking powder
  • 1 tsp dried mint
  • Salt & pepper to taste

Method: Preheat oven to 180°C. Grease a 30×22 cm baking dish.

  1. Whisk eggs, pumpkin, olive oil, and milk in a large bowl.
  2. Stir in flours, baking powder, turmeric, mint, salt, and pepper.
  3. Fold in feta and spring onion.
  4. Spread mixture in dish, drizzle with olive oil, sprinkle with poppy seeds if desired.
  5. Bake for 40–45 minutes until golden and set.
  6. Cool slightly before cutting into squares.
