Along with truffles,
roe is popular as one of the
most expensive foods in the world. Maybe that’s because in the past one could see it only on the king’s table. Today we usually associate it with an
exquisite hors d’oeuvre.
- How do professionals extract the hard roe?
We all know roe is the
internal or external egg masses of a certain fish, right? Its extraction process, though, is a very delicate work! The most important thing is to not kill the fish as in this case it tends to give out a bitter secretion, which ruins the whole taste.
But how it’s done? The fish is put to sleep with a slight hit behind its head and within the next 10 minutes the roe is removed.
- What does it contain?
People say that roe is
the most nutritional fish delicacy. It contains only 270 calories/100g. In the same amount of hard roe there are 25.3g proteins, 17g fats, 4g sugar, 440g cholesterol. The appetizer is also rich in sodium, potassium, phosphorus, calcium and vitamins A, B2, B44, B12, C, D.
- What are the health benefits?
It’s scientifically proven that hard roe normalizes the blood pressure and increases hemoglobin.
Omega-3 and -6 polyunsaturated fatty acids are said to improve brain activity and blood circulation. The heart and our immune system may also benefit from these components.
Tarama, or Greek cod roe, is a very popular appetizer that many people love! It goes well with bread, white wine and vodka.
