- Chocolate sandwich biscuits cheesecake
Hey, it’s not that difficult, nor that expensive to prepare this sweet cake. In fact, the products are
quite affordable, the process is
pretty simple, so let’s get down to work, shall we?!
Products:
for the base:
12 sandwich biscuits
50-60g butter
for the cream:
250g cream cheese
200g cream
3tbsp powdered sugar
4 sandwich biscuits
for the glaze:
100g chocolate spread
100g sour cream
for decoration:
8 mini sandwich biscuits
To start with, grab a cooking form with 16cm diameter. Crush the biscuits, mix with the butter and spread over the bottom of the tin. Press firmly to the base so you can create an even layer. Chill in the fridge while cooking the cream.
Take a bowl and whip the cream. In another bowl beat the cream cheese together with the sugar. Then add the cream to this mixture and
stir gently using a spatula. In the end, combine with the crumbled biscuits. Pour over the base layer and put it back in the fridge.
For the glaze you only have to mix the chocolate spread and the sour cream until they turn into a
thick homogenous paste. If you find it difficult to stir the choco spread, you might try heating it a bit in advance. After that pour on top of the cake.
Use some of the sandwich cookies (or whatever else you like) to decorate the desert and enjoy with the whole family!
- White chocolate biscuit cheesecake
Products:
for the base:
500g chocolate sandwich cookies
50g butter
for the cream:
500g cream cheese
130g powdered sugar
100g white chocolate
Vanilla extract
500ml whipping cream
30g gelatine
50ml water
The base is basically the same here! Take 300g of the biscuits (the rest will be for the
filling), turn them into crumbles and mix with the melted butter. Spread over a 24cm loose-bottomed tin and refrigerate for a while.
Now it’s time for the cream!
Melt the chocolate using a water bath.
Meanwhile, put the gelatin in the water and then dissolve using a water bath again.
Mix the cream cheese with the sugar until
well combined. Make sure the first one is at room temperature for
best results!
So, after that mix the sweet cream cheese together with the white chocolate and in the end add the gelatin and the vanilla. Stir well.
In another bowl whip the whole cream. Then gradually start adding it to the rest of the products while constantly stirring with a spatula.
Remember: the cream hardens fast so you need to spread it over the cake immediately after you prepare it.
So…
time to build!
Spread some cream over the biscuit base and decorate with some whole sandwich biscuits. Continue with more cream, then biscuits again and finish the cake with cream on top.
Put in the fridge for a couple of hours. You can decorate with some more biscuits or other preferable products on a later point.
