So, what is rye, after all? We would not be the last ones who say it is one of the most important whole grains around the world.   • Rye bread – This kind of bakery is often made with light rye flour. Rye flour usually doesn’t rise much and this is why the bread wouldn’t have a great volume, so to say. However, a rye bread will definitely stand out with a denser inner part because of the low elasticity of the gluten.
