How is Halloumi made? (Bonus: A Quick and Delicious way to enjoy it!)

Some people say ‘halloumi doesn’t go to the stomach, it goes to the heart.” In fact, the traditional Cypriot halloumi cheese is so delicious that it’ll make you long for more! If you are eager to know what makes halloumi different from the other cheeses, let’s see how it is prepared: Cypriots have been making it ever since the 16th century. Basically, the delicacy is produced from a mixture between goat, sheep and cow milk. When the milk with its ferment turns into a thick mass, producers put it in wicker baskets. After that the cheese is being pressed out, getting all the unnecessary wet away from the basket’s holes. Halloumi is then boiled, salted and seasoned with some fresh mint. That’s all!

What’s the lemon for? Squeeze some lemon juice on top and if you are brave enough, grate some of its peel for even more intense taste.
